If you need to resurrect a damaged frying or sauté pan, do what's called a burn-in.
Get the pan on a high heat and add a tablespoon of oil. Wait until it's smoking, then pour in a large about of salt.
Allow to cool a little then using kitchen roll apply quite a bit of pressure on the salt and oil mix and rub it all over the entire pan.
Then simply wipe off excess salt and oil with clean kitchen paper.
Do not wash!
After that, it'll be good as new. You may need to do this a few times to truly bring it back, but it works.
