3x6=18+3=21
8x11=88+8=96

Totally different set of rules. The original post only asks to add. Colin's is multiplication, so 96 wouldn't be an answer to the original post.

The same number sequence can be achieved by adding 1 to the second number and multiplying the result to the first number. That would also allow for the final example to be 96

1 x (4+1) = 5
2 x (5+1) = 12
3 x (6+1) = 21
8 x (11+1) = 96

Because the question mark in maths is asking you to solve the problem, not how you should solve it, so both addition and multiplication are valid ways to resolve the question mark.

I was going to give you all the answers but this maths riddle has caused a stir world wide with the same argument here, both plus and muliplication are used to give two different answers, so both @Kwaka_Rider and @Therapon are correct, I wanted to just sit back and watch a little

You could but then you cannot resolve the results after the = signs. Maths precendce is ÷ then x then + finally
